Chianti Classico is one of the noblest wines in the world and bears the name of the land from which it was born. Produced in the territory between the cities of Siena and Florence, its creation is regulated by strict rules to protect and guarantee its quality.

Saverio and its small vineyard, just over 5 hectares, bring a dream to the table of our bistro of Florence: a Chianti Classico produced in Monterotondo farm, at the extreme slopes of the Chianti Classico Gaiolese, the result of a old-time passion that we can find again in the aromas and in the true and deep taste of this amazing wine.

The cultivation method here is strictly organic, certified since 2003. In fact, for some years now, Saverio has been using a propolis-based preparation for replacing the traditional copper green. It goes without saying that in this natural approach, which pursues the best quality with minimal environmental impact, we have seen our philosophy fully shared!

Sustainable in production, the Vaggiolata and the Seretina (Chianti Classico 2012 Reserve) are composed of San Giovese, Canaiolo and Malvasia Nera. Aged in Slavonian oak barrels, both wines present a beautiful variety of fruity and floral aromas with hints of undergrowth and spices, a soft and deep taste that slowly reveals itself.

It is a local wine and its combinations with foods are really varied, we could say that it is a wine for all seasons.

The Chianti Classico Docg is a wine that blends perfectly with the typical dishes of the local tradition: a young vintage is the ideal match for a Tuscan cold cuts platter platter – the typical Reggello appetizer with some local cheeses – and for the Finocchiona, a big salami flavored with fennel, together with the soprassata and the raw enriched by the traditional salting.

This wine also goes well with traditional soups, ribollita or with the pappa al pomodoro, ennobled by a drizzle of organic extra virgin olive oil from our Podere La Croce. The Reserve, as well as the renowned Peposo all’Imprunetina, enhances in particular some classic foods of this area since ancient times, like roasts of red meat and the stew.
